Tip

For a spicier kick, add red pepper flakes or slices of fresh jalapeño to the chicken mix.

Variation

Try swapping chicken with turkey for a different taste. You can also add finely chopped spinach for extra greens.

Preheat your oven to 375°F (190°C). Cut the zucchinis in half lengthwise and scoop out the insides to create boats, leaving about 1/4 inch flesh. Place them on a baking sheet.

Chop the chicken breast into small cubes. Heat olive oil in a skillet over medium heat. Add garlic and sauté for about 1 minute until fragrant.

Add the cubed chicken to the skillet. Season with salt, pepper, and Italian seasoning. Cook until the chicken is golden brown and cooked through, about 10 minutes.

Remove from heat and mix in the halved cherry tomatoes. Stuff each zucchini boat with the chicken and tomato mixture.

Top each boat with grated mozzarella cheese. Bake in the preheated oven until the zucchini are tender and the cheese is bubbly and golden, about 20 minutes.

Remove from oven and allow to cool slightly before serving.

1 pound skinless, boneless chicken breast

1 cup cherry tomatoes, halved

1/2 cup grated mozzarella cheese

Base Ingredients

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste
